Blue fruit, jasmine and candied violet aromatics along with some subtle, herbaceous notes of fresh tobacco leaf. Mountain huckleberry, black currant and wild blueberries continue on the palate with a bright and driving acidity complemented with soft and lengthy tannins.

Their Castle Rock Pinot Noir is made from grapes grown in Oregon’s Willamette Valley, an area which has gained international recognition as one of the most prestigious appellations for this cool-climate varietal. This elegant medium-bodied wine offers aromas of cherry and spice. On the palate it gives flavors of berries, cinnamon, black cherry, sweet vanilla oak and floral notes, with a long velvety finish. It makes an excellent accompaniment to lamb, chicken, veal, salmon and light pasta dishes.

Southern Oregon provides the ideal site and cool climate for growing wine. They utilize sustainable viticulture practices along with modern technology to nurture the fruit. They strive for small berries that concentrate other flavors unique to the vineyard.
The estate grown Pinot Noir is medium bodied with ripe red fruit flavors and is moderately oaked to give complexity with the sweet baking spices. It pairs well with most foods and can stand alone to be enjoyed by itself.

The aromas of dark stone fruit give way to hints of licorice, tobacco and spice and help to deliver the palate more of the same with notes of blueberry, wet stone, and forest floor. This deep, complex wine is made from grapes grown at Walnut Ridge, Lynx Hill and Wild Winds vineyards in Oregon’s Willamette Valley. The grapes were fermented for 21 days in small, open-top tanks, then aged in French oak barrels. It was not fined or filtered. Sass will keep production small because the best wines are handmade, through a labor of love, passion and vision.

Years ago, Founder Jim Bernau began experimenting with Pinot Noir by gently dropping hand-picked whole clusters in a chilled stainless fermenter, pushing all the oxygen out with CO2 and sealing the vessel tight. What happened next was magical — the berries started to swell and turn pink. When they burst, they released the most aromatic, fermenting Pinot Noir.
